Microgreen Quesadillas

Traditional Mexican food terrific for anytime of the day. Great for those busy mornings, quick lunches, after school snacks, are simply when you're in the mood for comfort food.

Microgreen Quesadillas

  • 4 large flour tortillas

  • 2 cup shredded cheddar, or your favorite cheese blend

  • 1 tablespoon melted butter

  • 1/2 cup chopped Blessed Organics Microgreens of your choice. (In this dish we like Kale, and Sunflower).

  • Your favorite salsa

Optional side dishes

  • Cooked black beans

  • Steamed baby corrots


1. Lightly brush melted butter on both sides of each tortilla.

2. Heat frying pan over medium heat.

3. Place single tortilla on pan and top with 1 cup cheese and a pinch of salt. 

4. Once cheese has started to melt, add 1/4 cup chopped Blessed Organics Microgreens.

5. Place the second tortilla on top of the cheese.

6. With a flat spatula lightly press down on the top tortilla to help melt the cheese.

7. After about 2-3 minutes, flip the quesadilla with spatula and cook for another 2-3 minutes until cheese is fully melted or tortilla is cooked to your liking.

8. Repeat steps 3-7 for second quesadilla.

9. Cut quesadillas into 8 even slices (like a pizza).

10. Serve with your favorite salsa!
