Great refreshing summertime lunch. With this light yet filling dish you'll be able to skip noontime siesta and tackle the rest of your to-do list. Also great to prepare in advance for those on-the-go meals.
4 large spinach wraps.
1 cup cooked rice, such as long grain Jasmine Rice.
1 cup cooked black beans.
1 cup roasted corn
Blessed Organics Microgreens of your liking, such as Sunflower and Kale.
2 Roma tomatoes, chopped
1 large avocado, sliced
Salt and pepper to taste
1. Slightly warm spinach wraps.
2. Divide ingredients evenly on each wrap.
3. Serve and enjoy!
